Protein Pumpkin Loaf

This recipe is easy to make with just a few simple ingredients. Protein pumpkin loaves are low calorie and packed with high protein. You will be satisfied and have a lot of energy after indulging in this delicious power snack. Thank you to Rachelle for sharing this recipe with me and now I have the pleasure to share it with all of you.

Ingredients:

  1. 2 egg whites

  2. 1 scoop of protein powder (I use quest vanilla)

  3. 1/4 cup old fashion oatmeal

  4. 1/4 cup pumpkin puree

  5. 1 teaspoon baking powder

  6. 1/4 teaspoon vanilla extract

  7. cinnamon and stevia to taste ( When using flavored protein, omit stevia)

Directions:

Preheat oven to 350'

  1. Mix all dry ingredients in a bowl, set aside

  2. In a separate bowl blend wet ingredients using hand mixer , then mix in dry ingredients

  3. Spray mini loaf pan with non stick cooking spray, fill equally with batter

  4. Bake 25-30 minutes

Note: Serving size one. (To make 8 mini loaves multiply recipe by 4)
