20-Minute Chicken & Veggie Stir Fry

Yes! 20 minutes to make this delicious and simple dish. I use whatever type of vegetable in my fridge, in this case I had the sweet snap peas, carrots.... So this recipe is great to switch up the ingredients. The flavor profile full of umami flavor, savory and sweet with a little kick of heat. I make my rice and store in a airtight container up to 3 days ready to use when needed. It will seem you worked hard in the kitchen to get it done for all to enjoy. Happy creating in the kitchen!




Ingredients:

  • 2-3 TBSP Olive Oil or Avocado Oil

  • 1 lb Chicken Tenderloin, cut 1 inch pieces,( can use Tofu)

  • 2 Carrots, cut 1/2 inch pieces

  • 2 Celery Sticks. cut 1/2 inch pieces

  • 1 small Sweet Onion, cut 1/2 inch pieces

  • 1/2 Sweet Potato, cut 1/2 inch pieces

  • 1 1/2 cup Sugar Snap Peas

  • Optional Other Veggie choices; Broccoli, Mushrooms, Asparagus, Bell Pepper

  • Kinder's Teriyaki Sauce, or your favorite teriyaki sauce

  • Kinder's The Blend Seasoning

  • Sesame Seeds

  • Optional: Sriracha Hot Sauce

  • Optional: Your choice of Rice, Follow directions to prepare


Directions:

  • Season chicken tenders with Kinder's "The Blend" and in a large skillet on medium heat drizzle in 2 TBSP oil then add cut seasoned chicken tenders, fry each side 1 1/2- 2 min, after chicken is cooked put in a bowl and set aside

  • Add remaining olive oil in same skillet, add carrots, celery, onions, sweet potatoes stir fry 10 min, add Sweet Snap Peas, stir fry all until tender, but not to soft

  • Add back the chicken tender and drizzle amount of teriyaki sauce to your liking, after plating top with sesame seeds, you can add sesame seeds within the stir fry as well, drizzle teriyaki add drops of sriracha prior to serving

  • If using rice heat up and top the rice with Chicken and Veggies add a drizzle of teriyaki , sesame seeds and a few drops of sriracha, Enjoy!
