Cran-Apple Banana Nut Muffins

I was playing around in my kitchen and decided to use what I had to make some muffins. That evening I sat down to try to remember exactly what I used, because they were worthy of publishing- remember I usually do a little of this and a little of that and pray it turns out, Well these did and are delicious! Perfect to make for mother's day breakfast or brunch, ok anytime. Enjoy!


Ingredients: preheat oven 350 degrees, prep muffin pan and line with cupcake liners, makes 12

Part 1- Mix dry ingredients in a bowl and set aside

  • 1 heaping cup of Flour

  • 1 tsp Baking Soda

  • 1 tsp Baking Powder

  • 1/2 tsp sea salt

  • 1/2 tsp Ground Cinnamon

Part 2- Using a Mixer beat altogether

  • 1 large Egg

  • 1/2 cup Brown Sugar

  • 1 tsp real Vanilla Extract

  • 1 1/2 TBLS Honey

Part 3-Mash in a bowl and add to part 2

  • 2 ripe Bananas

  • 1/4 cup Canola Oil

  • 1/2 cup Apple Sauce

Add to part 2 and mix in dry ingredients

Part 4- measure out and add to all ingredients

  • 1/2 of large Apple, cut small into 1/4 inch pieces

  • 1/2 cup Pecans, roughly chop

  • 1/2 cup Dried Cranberries


Directions:

  • Follow each step then fill the paper lined muffin pan, Bake 22 minutes or until pick comes out clean

*Store in air tight container room temperature up to 3 days or in fridge 5 days, Optional to heat in microwave before serving, Enjoy!
