Sweet Potato & Bean Chili

I can't believe it's February and a little chilly outside so I thought lets start this new year with a healthy version of a chili for the chilly days and nights. I created this with simple ingredients that most have stocked in ones pantry. Maybe even make for your loved ones on Valentine's day to warm up their tummies and hearts. Enjoy!


Ingredients:

  • 2 Large Sweet Potato, peel, cut in bite size pieces, set aside

  • 1-15.5 oz. can Black Beans, discard & strain juice

  • 1-15.5 oz. can Kidney Beans, discard & strain juice

  • 2-15 oz. can Organic Tomato Sauce

  • 1-4 oz. can mild Green Chili Pepper

  • 1-15.5 oz. can Corn, discard & strain juice

  • 2 cups Veggie or Chicken Stock

  • 2 TBl. Avocado or Olive Oil

  • 2-3 Sticks Celery, cut 1/2 inch pieces

  • 1 Medium Sweet Onion, cut 1/2 inch pieces

  • Optional: 1 green Bell Pepper, Cut 1/2 inch pieces

  • 1 TBL. Cumin

  • 1 tsp. Chili Powder

  • 1 tsp. Garlic Powder

  • 1/4 tsp. Sea Salt, to taste

  • 1/4 tsp. Black Pepper, to taste

  • 1/2 tsp. Ground Cinnamon

  • 1 tsp. Sweet Paprika

  • Optional: Any type of ground meat, browned & seasoned

  • Optional for garnish: Sour Cream, green onion, cheddar cheese


Directions:

  • In a large saute' pan add the avo or olive oil, on medium low heat add onions, celery and if using bell pepper. Stir occasionally cook until soft

  • In a large pot pour in tomato sauce, stock, add green chili & saute' onion mixture, stir together

  • Add sweet potatoes & all of the spices. Stir altogether, add your browned meat if you choose to use, I hope you try without first, Super yummy!

  • Let simmer on medium low heat for 35-40 minutes or until sweet potatoes are soft, Stirring occasionally

  • Turn off heat & let sit 15 minutes before serving, top with garnishes & Enjoy!

*The Sweet potato will thicken the chili from the starches that are released also the sweetness will cut the acidity from the tomato

Serving : 8 -10 1 cup servings
