"Refrigerator Bread and Butter Pickles"

Ingredients:

  1. 6 cups sliced pickling cucumbers

  2. 2 cups thinly sliced onions

  3. 1 cup thinly sliced red bell pepper

  4. 1 1/2 cups of white vinegar

  5. 3/4 cup sugar

  6. 3/4 teaspoon salt

  7. 1/2 teaspoon mustard seeds

  8. 1/2 teaspoon celery seeds

  9. 1/2 teaspoon freshly ground black pepper

  10. 1/2 teaspoon whole peppercorn

  11. 1/2 teaspoon ground turmeric

  12. 1/2 teaspoon crushed red pepper

  13. 4 garlic cloves, thinly sliced

Directions:

  1. Use sterilized jars.

  2. Alternating, place layers of cucumbers, onions and a few red bell peppers almost to the top of jars.

  3. In a saucepan, mix remaining ingredients and bring to a boil.

  4. Let sit for 1 minute. (Be careful with steam; try not to breathe or get in eyes while boiling.)

  5. Pour liquid over cucumber mixture, cover and let cool.

  6. Place in refrigerator for four days before eating.

  7. Pickles can be stored up to 1 month.

These pickles make excellent gifts for any of your foodie friends!
