Meaty Twice Baked Potato

Twice baked potatoes are hearty and fun to make. I thought why not fill the baked potato with a meaty delight, then it was time to decide what flavor profile. I wanted to go with so many options, Mexican, Italian, Chinese, Indian..... I mixed it up to make a Mediterranean version but this sounds funny I topped mine with a spicy Bbq sauce, sounds weird but it was so delicious. Of course you can make a tzatziki sauce or any sauce you desire. These are perfect to take to a July 4th celebration or any gathering. Happy cooking & Enjoy!


Ingredients:

  • 1 LB Ground Chicken or any ground meat of your choice

  • 3-4 Large Russet Potato

  • Avo Oil or Olive Oil, to drizzle on potatoes

  • Maldon Salt, to sprinkle on Potatoes

  • 1/2 cup Feta

  • Grated Parmesan, to top potatoes

  • 2 cups Chopped Fresh Spinach, chopped

  • 2 TBsp Fresh Chives, cut small pieces

  • Optional: 1 TBSP Chopped Mint

  • 1 tsp Black Ground Pepper, to taste

  • 1 tsp garlic powder, to taste

  • 1 tsp sea salt, to taste

  • 2 tsp Minced Garlic

  • 1/2 tsp Dried Oregano


Direction: Preheat oven 475 degree Part 1 prepping and Quick Baking Potato Method

  • Wash potatoes, poke a few holes in each, One at a time wrap in damp paper towel place in microwave for 4 minutes, do this with all potatoes 1 at a time.

  • Cut 3-4 pieces of foil enough to wrap each potato

  • Drizzle with avo or olive oil, sprinkle with maldon salt and wrap the potato

  • Place all potatoes on a baking sheet, bake for 1 hour

  • Remove Potatoes, cool slightly to be able to handle and cut each in 1/2, place back on a baking sheet

  • Reduce heat 450 degree

  • Scoop out the inside of each potato, put in a bowl, set aside

  • In another bowl mix together chopped Spinach, all spices and herbs, feta, Ground meat and add the potato that was scooped out mixing all together well but gently

  • Equal out the mixture and make a football shape and fill each potato, top with parmesan

  • Bake for 40-45 minute or internal temperature reaches 165 degree

  • Place on a serving tray or dish, top with whatever sauce you desire

  • I know it sounds weird but what I topped mine with was bbq sauce and some sriracha, it was so delicious
