Spooktacular Black Bean Soup

Are you going to have a gathering for Halloween or fun family night. Make this delicious Black bean soup and decorate it with a web of sour cream and add a spider or two. Make those with Black Olives sitting on a patch of greenery, I use Cilantro, If using a plastic spider tie a string to them and tie the end of the string on your spoon/ladle to create a long web, it's for safety so no one tries to eat them. Serve in a large cauldron or individual fun vessels. Add the sour cream spider web & spiders right before serving.

Ingredients:

  • 4 cans Organic Black Beans, Rinsed

  • 6 1/2 cups of Vegetable stock, can use chicken if you prefer

  • 3 Tbsp Avocado oil

  • 1 medium size Sweet Onion, cut 1/4 inch pieces

  • 1 red Bell Pepper, cut 1/4 inch pieces

  • 2 medium size Carrots, cut into small pieces

  • 4-5 clove Garlic, minced

  • 1 Tbsp cumin

  • 1/2 tsp Chili Powder, if like heat add more to taste

  • 2 tsp sweet Paprika

  • 2 tsp dried Oregano

  • dash ground Cinnamon

  • 1 tsp Sea Salt, to taste

  • Ground Black Pepper, to taste

  • Optional: 1 small jalapeno, cut small pieces

  • Optional Side: Avocado, Cilantro & Lime wedges, side of corn tortillas

  • Black Olives to make spiders, cut in half, use one half for body the other cut lengthwise into 4 long legs then create your spiders. Place on top of a patch of cilantro.


Directions:

  • In a large skillet drizzle avocado oil, turn stove on medium heat

  • Add onions, carrots and bell pepper, cover with lid, cook until soft, stir periodically

  • Add garlic stirring to keep from browning to much, if using jalapenos add now

  • In a large pot pour in stock and your rinsed black beans, add the cumin, chili powder, paprika, oregano, cinnamon, salt & pepper, put heat on medium high heat until bubbly stage, turn down heat to continue to simmer

  • Add the skillet of onions, carrots, bell pepper and garlic

  • Let simmer for minimum of 45 minutes to have the flavors marry together
