The Eggocado

Looking for a delicious and simple way to start your day? Look no further than the Eggocado! In no more than 20 minutes, you can power-charge your brain and body with a great source of both protein and Omega-3 fatty acids. Your mornings deserve more than just coffee, so try this recipe out today!

What You Will Need:

  1. Aluminum foil

  2. Non-stick cooking spray

  3. Baking tray

  4. Avocado, ½ per person, pitted

  5. Eggs, one per person

  6. Your favorite seasonings

  7. Optional: Parmesan cheese

Instructions:

  1. Preheat oven to 450℉.

  2. Line baking sheet with foil and spray with non-stick cooking spray.

  3. Cut avocado in half, remove pit and discard.

  4. Crack egg and place into center of avocado. Some of the egg will overflow if it is too big, so use the appropriate sized egg for your avocado.

  5. Season egg with your favorite seasonings; I like to use freshly ground black pepper, a dash of cayenne pepper and a sprinkle of Parmesan cheese.

  6. Bake the Eggocado for 15-18 minutes, or until the egg is set.

  7. Serve immediately with your favorite fruit and toast on the side.

I tested the Eggocado both hot and cold and it was incredibly tasty either way, so give it a shot!
