Buttermilk Cornbread Waffles

One morning I was contemplating making my cornbread and also some waffles and it dawned on me -why not put the two together, to make cornbread waffles. This required a few measurement changes from my cornbread recipe which was easily done. I was so happy because these waffles turned out amazing and are now something that I will make regularly. Great all on their own with a drizzle of maple syrup but when elevating for a special brunch, lunch or dinner, they are exceptional. My husband Nicky loves "Chicken & Waffles" so these waffles are perfect. Hearty and full of flavor, they would pair really wonderfully with any type of meat- Like I always say get creative & enjoy!


Ingredients:

  • 1 1/2 cups Masa Harina

  • 1/2 cup Flour

  • 2 TBSP Baking Powder

  • 1 tsp Sea Salt

  • 2 large Eggs, room temperature, beaten

  • 1/2 cup Maple Syrup

  • 16 oz (1 pint) Buttermilk

  • 6 TBSP Melted unsalted Butter

  • 1 can 15.25 oz Fresh cut Whole Kernel Corn

  • Optional: finely cut jalapenos, dash of cayenne or finely cut roasted chilis

  • Equipment: Waffle maker, Large spoon, non stick spray, Bowl, mixing spoon, cooling rack


Directions:

Preheat waffle iron, spray with non stick spray prior to each application of batter

  • In a bowl mix all dry ingredients, masa, flour, baking powder & Sea salt, set aside

  • In another bowl mix eggs, maple syrup, buttermilk, melted butter together

  • Combine wet ingredients , corn with dry, stir until all mixed together, the batter will be a thick consistency

  • When waffle iron is ready and hot spray top and bottom with non stick spray, using a large serving spoon fill full of batter, using your finger push batter in square section of waffle iron, repeat to do with all sections, close waffle lid, bake 2-4 min until waffle golden brown

  • When golden brown place on cooling rack and continue making waffles, I get 12 if I'm not filling each square fully, I prefer the rustic odd shape look

  • Serve with a drizzle of maple syrup or use as a side or vessel with any meat entree. This is a perfect waffle to use to make your Chicken and Waffle meal. Enjoy!

*Store in an airtight container in fridge up to 5 days or freeze 3 months.

Reheat in your oven or toaster .
